I hear the word “key fob” thrown around a lot. I’ve heard Flipper Zero can do many things. I have to assume it will pick up all three 4 fan speeds (including off) as well as the light switch from the wireless remote that came with the fan, right??

If I Google for ‘key fob’, the most results are RFID token for the keychain. I really doubt you have 4 RFID token to control your fan, even if this would be easily possible with standard home automation solutions.
I think you have a wireless remote. This could be a RF remote, a IR remote. And there are different approaches how any of this communication ways will be used.
Different modulations, different protocols, different frequencies.
If it is using something like rolling code, the Flipper is out. If not, the answer is a definitive ‘maybe it works’.
